Pan Fried Spanish Mackerel with Smoked Paparika Caramalised Onion Vinegar Sauce

A quick and simple 15 min meal for a busy work days, and has all the nutrients you need.

What you need (serves 2 people):

2 firm Mackerel steak or any firm fish
1 Red Onion (finely chopped)
Half bunch Continental Parsley (chopped)
2/3 cup Red Wine Vinegar
1.5 tsp Smoked Paparika
1 Tbsp Brown Sugar (to taste, if it’s sour, add more)
Fresh chopped Chilli (optional)

1) Rub some vegetable oil on the fish first, heat the fry pan till it’s ready. Slide the oiled fish on to the pan, cooked to your preference. (Salmon and tuna are generally medium rare, other fish can be well done)

2) Take the fish out of the pan and set aside. Use the remaining oil to brown the onion until it’s soften, put the Paparika, sugar and vinegar in. Sauté until it’s thicken a little (approx 1 min), lastly the parsley is added before turning of the heat.

3) Plat up the fish, pour the parsley onion mixture all over the fish. Happy meal
