This salad has lured even the person who hates Kale. It takes only 20 minutes to serve and carries full of goodness. A healthy and delicious warm salad suitable all year round.
What you need:
1 bunch Curley Green Kale (washed, remove the tough stems)
1 Red Onion (sliced)
1 Avocado (sliced)
a handful baby tomato (sliced half)
1/2 Red Capsicum (diced)
some Fresh Mint Leaves (optional)
a Tbsp pitted olives (optional)
a handful of cashew nuts or almond flakes (roasted and lightly crushed)
a handful of sultana (soaked in hot water to plump them up)
(all ingredients are optional, choose according to your preference)
1 lemon (juiced)
1/2 Tbsp Honey
1 1/2 Tbsp Olive Oil
1. Boiled a pot of water, quickly blanched the kale for 5 sec and pour into a colander, run cold water through the blanched kale. Squeeze the access water from kale, then sliced to your preference.
2. Use a hot pan with a little olive oil to caramlise the red onion and set aside
3. Mixed lemon juice with honey and olive oil for the dressing
4. mixed all the ingredients together, sprinkle the crushed nuts at last.
