Lately I am on my veggie journey for a dry February (alcohol free), plus low carb among other things. The veggie tots are just so easy to make and a great snack.
What you need:
Half Cauliflower (3 cups, finely grated and blanched)
1 Carrot (finely grated and blanched), or Red Capsicum (finely chopped)
1 Brown Onion (finely chopped)
1/2 Tbsp Parsley
Salt and Pepper
1 Large Egg
1 Cup Panko Crumbs
2/3 Cheddar Cheese (grated)
1/3 Parmesan Cheese (grated)
Preheat the oven at 190 to 200 C degree
- I used a processor for onion, once processed finely, throw in the blanched carrot and cauliflower; only roughly process the veggies. You want to still retain the texture.
- Mixed all the ingredients together. Shape them into small finger food. Then bake for 25 to 30 minutes.
- Done. Served with tomato sauce, chilli sauce or serracha 🙂
