Cauliflower Tots

Lately I am on my veggie journey for a dry February (alcohol free), plus low carb among other things. The veggie tots are just so easy to make and a great snack.

What you need:
Half Cauliflower (3 cups, finely grated and blanched)
1 Carrot (finely grated and blanched), or Red Capsicum (finely chopped)
1 Brown Onion (finely chopped)
1/2 Tbsp Parsley
Salt and Pepper
1 Large Egg
1 Cup Panko Crumbs
2/3 Cheddar Cheese (grated)
1/3 Parmesan Cheese (grated)

How:

Preheat the oven at 190 to 200 C degree

  1. I used a processor for onion, once processed finely, throw in the blanched carrot and cauliflower; only roughly process the veggies. You want to still retain the texture.
  2. Mixed all the ingredients together. Shape them into small finger food. Then bake for 25 to 30 minutes.
  3. Done. Served with tomato sauce, chilli sauce or serracha 🙂
