Cauliflower Veggie Bake


I love this ‘fridge cleaning’ bake. Basically whatever is in the fridge can be contributed as long as there are cheeses and eggs.

Not a cheese person? Just turned it into a quiche.

What you need:
*Food Processor – not neccesary, helpful
1/2 Brown Onion (finely chopped)
1/2Cauliflower (blanched)
1 Carrots (blanched)
2 Cups Sweet Potato or Pumpkin
2 Cups Kale (blanched)
3 Eggs
1/2 Cup Panko
1/2 Cup Parmesan Cheese
2/3 Cup Cheddar (Or more for personal preference)
Salt & Pepper

Preheat the oven 190 ° Celsius

  1. A deep pot with 1.5 L water to blanched the veggies, boil the carrots & potato. Drain the water from the veggies.
  2. Use a blender and blend the veggies into finer pieces.
  3. Mixed everything  well; pour into a baking tray and pack the ingredients solid.
  4. Baked for 35 to 40 min.
