Onion Chilli Jam

This recipe makes 4 x 250 ml jars of Jam

What you need:

4 Sterilised 250 ml Jam Jars

Olive Oil

8 Large Red Onion or mixed to your preference (finely chopped)

4 Orange Habanero (finely chopped)

6 Long Green Chilli (finely chopped)

320 ml Red Wine Vinegar

4 tsp Tomato Puree (preferred) or 3 Tbsp Tomato Sauce

280 g Caster Sugar

2 tsp Cinnamon Power

4 Bay Leaves

Pinch of salt and pepper

  1. Sauté the onions with a small amount of olive oil until soften, approx. 10 min
  2. Add chillis, tomato puree and cinnamon power, mixed well for another 2 min
  3. Add the rest of the ingredients in. Mixed thoroughly; reduce the heat to low and simmer until the liquid is reduced, approx. 45 min until the consistency is jam-like
  4. Jar them and close the lid when the temperature is cool
  5. PATIENCE! Wait for a few days until the flavour is developed
